AVOCADO ON TOAST WITH BBQ CHICKPEA , RED ONION AND CILANTRO

Ingredients:

  • 2 slices bread of choice sourdough, multigrain, whole wheat, etc.
  • 1 small ripe avocado
  • 1/2 cup canned chickpeas rinsed and drained
  • 2 Tablespoons BBQ sauce
  • 1/4 red onion sliced thin
  • 1 Tablespoon fresh cilantro chopped

Instructions:

  1. Mix chickpeas with BBQ sauce
  2. Mash Avocado with a fork, toast bread and spoon avocado over toast.
  3. Top with chickpeas and the rest of the ingredients.
  4. Enjoy!
