Why is Kefir good for you?

It is trending in the natural health circles. Kefir is rich with nutrients and probiotics, super beneficial for gut health and digestion. Dairy free options of kefir can be made from coconut water, coconut milk, as well as other sweet liquids but will not have the same benefits as that of dairy milk kefir. It is rich in protein, B vitamins and calcium.

Yoghurt is known as a probiotic food in the West, but kefir is a more potent source. Kefir is also lower in lactose than milk, as it turns the lactose into lactic acid. it contains special enzymes which assist in breaking down the lactose even further.

AVOCADO ON TOAST WITH BBQ CHICKPEA , RED ONION AND CILANTRO

Ingredients:

  • 2 slices bread of choice sourdough, multigrain, whole wheat, etc.
  • 1 small ripe avocado
  • 1/2 cup canned chickpeas rinsed and drained
  • 2 Tablespoons BBQ sauce
  • 1/4 red onion sliced thin
  • 1 Tablespoon fresh cilantro chopped

Instructions:

  1. Mix chickpeas with BBQ sauce
  2. Mash Avocado with a fork, toast bread and spoon avocado over toast.
  3. Top with chickpeas and the rest of the ingredients.
  4. Enjoy!

MY HOMEMADE GRANOLA

Crunchy Goodness!

Eat Yourself Beautiful

I love this recipe so very much, it’s quick, easy and so simple to make. Just delicious and crunchy, the perfect topping on natural yoghurt.

Hope you give this recipe a try… once you do , I am sure that you will appreciate a taste of home, making it yourself is so much better than store-bought granola , not to mention cheaper in the long run!

Ingredients:

  • 50g mixed unsalted nuts, I used just hazelnuts.
  • 50g seeds, you can use pumpkin , sunflower, sesame and flaxseeds.
  • 150g rolled oats
  • Olive oil
  • runny honey
  • 1 tbsp unsweetened shredded, dried or dessicated coconut , plus extra to serve, I used flaked coconut.

Instructions:

Preheat the oven to 180 degrees celsius, then reduce to 150 degrees celsius.Roughly chop nuts and seeds. Add to a large bowl with half the oats and drizzle about half a tablespoon of oil and honey, mix well. Spread out the granola evenly on a lined baking tray and roast for approximately 20 minutes or until nice and golden.

Now stir through the coconut. You could add coconut at the end , whilst granola is still in the oven , if you prefer the coconut to be nice and crisp!

Serve with plain yohurt and drizzle with honey.

RIPPLED YOGHURT BREAKFAST BOWL

Serves 4 | 5 minutes

Ingredients:

  • 300g frozen blueberries
  • 1 banana
  • 300g plain yoghurt
  • runny honey
  • granola
  • a squeeze of lime

Instructions:

  1. Heat frozen blueberries in a small saucepan, over a medium flame for 5 minutes and add a bit of honey, about half a tablespoon or so. Stir occasionally and add a splash of water if needed.
  2. Peel and slice banana into coins, then toss with lime juice.
  3. Divide between 4 shallow bowls, add yoghurt, ripple the blueberry juices into the yoghurt, spoon over the remaining blueberry compote, top with sliced bananas and granola.
  4. Feel free to explore with different toppings, this breakfast is truly versatile, bring your creative streak to life!
  5. Enjoy!

GOOD OLD FASHIONED OATS FOR BREAKFAST

Say goodbye to oatmeal packets and start making your very own oats at home. It is simple and easy to prepare, I promise…much cheaper in the long run and more delicious! It is customizable, you decide how to make it and what oatmeal toppings you prefer.

Let’s get cooking!

Ingredients:

  • 1/2 cup rolled oats
  • 1/2 cup water
  • 1/2 cup milk of choice ( I used unsweetened almond milk)
  • a pinch of salt

For the topping:

  • 1 large apple
  • 1/8 tsp nutmeg
  • 1/8 tsp cinnamon
  • 1 tbsp water

Instructions:

  1. In a small saucepan, bring milk and water to a boil. Reduce to a low flame and add in oats.
  2. Cook until oats are soft and most of the liquid has been absorbed, stirring occasionally. Remove oats from the heat, cover and allow to stand for 2-3 minutes.
  3. Now for the stewed fruit, peel, core and chop apple. In another saucepan, add chopped apple , nutmeg, cinnamon and water. Bring to a simmer. Stew the apples until soft.

Assembly:

Stir in the stewed apple. Thin with some more milk , if desired. Serve warm.

Additional toppings to boost flavour: (optional)

  • Seeds, I used a mix of pumpkin seeds, sunflower, flax and chia seeds. You could also use any nut or seed butter.
  • Nuts, I used blanched almonds. Pecans or walnuts are also perfect.
  • Sweetner, Maple syrup, honey, agave nectar, brown sugar, I did not add any, as I prefer the natural sweetness from the apples.
  • Spices, cardamom, nutmeg, cinnamon, pumpkin spice

Serves 4| Prep time 15 min|

Ingredients:

  • 1 ripe banana
  • 2 kiwi fruit , peeled and halved
  • 1/2 cup yoghurt (optional)
  • 1 ripe avocado, peeled, stoned and quartered
  • 2 dates , stoned
  • 1 T nut butter
  • 100g baby spinach
  • a squeeze of lime juice
  • Ice, for serving

Instructions:

  1. Blend all the ingredients
  2. Enjoy!

Cook’s note: You will need to halve the ingredients if making a smoothie for one.
