SOBA NOODLES STIR FRY

SIMPLE FOOD!

























































Ingredients:

For the hoisin sauce

  • 2 tbsp raisins
  • garlic clove
  • 1 tbsp apple cider vinegar
  • 2 tsp tomato purée
  • 1 tsp tamari, plus extra to serve (optional)
  • 1 tsp Chinese five spice
  • 2 tbsp crunchy peanut butter (without palm oil or sugar)

For the stir-fry

Instructions:

1.Add raisins to a measuring jug, pour 100ml boiling water, then add chopped garlic, apple cider vinegar, tomato puree, tamari and five spice. Use a stick blender to puree ingredients until smooth, then add peanut butter.

2.Bring a pot of water to a boil. Add soba noodles and cook for 5 minutes until tender. Strain noodles and set aside. Add oil to a pan, put onions, ginger and chilli, sautee until onions have softened. Now add the remaining ingredients and cook for 5 minutes, spoon in homemade hoisin sauce, stir and add soba noodles. Toss gently and garnish with fresh basil leaves
